紫苜蓿（medicago sativa）又名紫花苜蓿、苜蓿、南苜蓿、金花菜、光风草、草头等，属豆科植物。营养成分特点是每百克干苜蓿粉含纯蛋白质4.2g，铁4.8mg、胡萝卜素3.48mg，维生素b 20.22mg，维生素c 85mg，苜蓿皂甙1.2g。苜蓿皂甙主要功能：有明显的降血脂作用，促进胆固醇排泄，降血脂,有预防和减轻动脉硬化的作用。紫花苜宿Zui早是由阿拉伯人发现，紫花苜蓿芽现已成为普遍食品。早期的中国人将紫花苜蓿幼嫩的叶子用于改善消化系统紊乱；在印度，科学家使用紫花苜蓿叶子与花果的顶部来改善较差的消化系统，并考虑到了关节炎及保水的作用。北美印地安人推荐，可用紫花苜蓿来改善黄疸以及促进凝血能力。他们把这种珍贵的食物称为食物之父，因为它的叶子含有丰富的矿物质和营养素，如钙、镁、钾和胡萝卜素。英国草药医生约翰．杰洛曾建议用它来改善胃不适。它除了可以做有效的通便剂和天然的利尿剂之外，还可用来预防尿道感染。这种多功能草本不仅是民间舒缓风湿病的良方，也是很好的开胃剂和滋补品。
