酱卤制品专用色素是由大米、黄豆为原料，采用红曲霉菌液体深层发酵和独特的提取精制技术生产而出的一种纯天然色素。主要成份为红曲红色素、红曲黄色素。

性状：红色或红褐色粉末，溶于水，乙醇，不溶于油质；易吸潮，吸潮后结块，但不影响使用效果。

应用：天然食用色素，主要用于：川味卤味、川味卤凤爪、酱卤肉制品、卤蛋类、温州风味产品(如“乡吧佬”)酱调料品等。

使用方法：将本品按所需用量直接用水或食用酒精溶解，然后加入配料中着色，混合均匀即可，用量按产品的色调要求调整(以自己实际情况而定)。

质量指标：

包装：200g、5kg等规格的铝箔袋包装，外箱为10kg纸箱。可以根据客户要求包装。

储存及保质期：应密封，置于通风、阴凉、干燥处，严防光照、受热，禁止与有毒物品混合存放。在包装完整且未经启封情况下，保质期为二年。

traits: red or reddish-brown powder, soluble in water, ethanol, not soluble in oil; easy moisture absorption, agglomeration after moisture absorption, which, however, does not affect the results.

applications: natural food pigment, mainly for : sichuan dishes and sauced meat, sichuan flavor sauced chicken抯 feet, sauced meat products, sauced eggs, wenzhou-style products (such as xiangbalao), and sauced seasonings, etc.

usage: the product should be directly dissolved by water or edible alcohol in accordance with the amount needed, and then be added into the ingredient for coloring and then be mixed evenly. the amount can be adjusted in accordance with the hue requirement of the products.
