红曲红色素(y型)
红曲红y型色素是由米粉和黄豆经过红曲霉采用液体深层发酵技术,通过菌种的选育、发酵配方及工艺条件的控制,使红曲菌代谢产生黄色调色素,再经过压滤、浓缩、干燥等工艺精制而成。其主要成分为红曲红素和赤红曲黄素,易溶于水和乙醇,色调为橙黄色。该色素具有光热稳定性好,ph适应范围广,安全无毒,使用方便等特点。
性状:枣红色粉末,无异臭,易容于水、酒精。容易吸潮结块,但不影响使用。
应用:主要用于肉松、肉制品(炸鸡,烤鸡,肉铺,肉干,罐头类)、米面制品、膨化食品、烘焙食品、蛋黄、饮料、各种调味酱、复合调味料。是柠檬黄等化学合成色素的理想代替品。
使用方法:用水或酒精直接溶解,然后直接添加到配料里面混合使用,混合均匀即可,建议用量0.5‰~1‰,开封后请尽快使用或密闭保存。

储存及保质期:应密封,置于通风、阴凉、干燥处,严防光照、受热,禁止与有毒物品混合存放。在包装完整且未经启封情况下,保质期粉末为二年,液体为6个月。
